The 2021 calender celebrated some favorite recipes from the last two decades. Many calendar fans enjoy the chile images and like to decorate their kitchen with them. Others want to cook the recipes. For those who tell me “I would like to cook your recipes but I just can't cook.” I would respectfuly reply, "Not until you try." Think of a recipe as a simple cooking lesson with a big reward. So just try one and become an empowered home cook.
If some recipes seem lengthy or evolved, start with one less complicated. Go to the market, get your goods and just follow the recipe, step by step and you are cook’n! You will have the reward of experiencing something new and hopefully satisfying. Hot or not, meat or vegetarian, adjust to your own taste and diet.
After so many years of experimenting with recipes and my own ideas, testing and tweaking ethnic recipes, I pretty much know how something should taste as I delve into a recipe. My pantry is loaded with so many ingredients it’s scary.
Most dishes that I cook for myself on a daily basis are pretty simple and not always from recipes – generally they are Southwestern, Latin and Asian styles. And if I’m trying out a new recipe, I can hardly restrain myself from pushing it to please my taste palate.
The flavor profiles and nuances in the world of chiles offer a palate of wonderful options for our taste buds. Like good wines there are many flavors to enjoy and employ when cooking a meal. Below are some tasty dinner treats from my kitchen.
