BERBERE SAUCE
Berbere is the fantastic seasoning of Ethiopia and Eritrea, with many regional variations. It is prepared as a dry spice
for seasoning as well as a sauce. It is pungent and fragrant with a unique a flavor. Excellent for stews, grilling or baking
seafood and meats. This blend is spicy, but you can kick it up with a hot chile such as African Bird pepper. Use the sauce
for seasoning and marinades. The perfect BBQ sauce.
Yield: About 3 cups

Tbsp. Berbere Spice Blend*
1/2 tsp African Bird pepper*
3 garlic cloves

large shallots or a medium onion, peeled and chopped
1 lime, juiced
1 cup red wine
1/2 cup tomato puree
1/2 cup canola or peanut oil
Place
the Berbere spice in a blender with the wine, garlic and shallot. Set the blender on a low chopping mode until well mixed
and then puree to a smooth mixture. While running pour in the tomato puree and oil.
Stir until thick and store in a
covered container in the refrigerator.
NOTE: When adding hot chiles to taste, start with 1/2 tsp
and add more as necessary.
